Here is a fun soup idea for you! With my family's favorite part of Thanksgiving, Christmas, and Easter meals being the green bean casserole, this recipe fits right in with us. Oh man, is it yummy!!! (Yes, that is yeast free bread, super good!) My buddy asks for it constantly. I was rummaging through my almost empty fridge one day trying to piece things together for lunch, I was going grocery shopping after church that night;) I had enough ingredients to fashion a new soup idea for us. As I was throwing together my soup, I saw I had a small bunch of green beans left from our last harvest and thought, huh, I wonder. And so, green bean casserole soup was born.
I threw them in the cream of mushroom soup, ssshhh, I didn't say anything when I served it. I wanted to see what the family would do, heeheehee. I had a few pieces of bacon left over that I didn't cook for breakfast and I thought, score, protein! It was a hit! Top the green bean casserole soup off with cheese and fried onions and this is killer crowd pleaser. This is now a staple in the family meal plan. In fact, it is what my buddy asked for lunch and dinner on his birthday. And I love that the tradition green bean casserole is still kept special.
To top it off, the recipe is gluten and yeast free. If you wanna make it paleo, you can omit the cream for coconut milk. To make it vegan you can also omit the bacon, maybe throw some yummy tofu in there.
