So, I have been craving white chicken chili but didn't want the comfort food calories while I heal from the biopsies and I can't train. Here is what I came up with...I had some tender chicken breast meat left from prepping over the weekend and a few other things including coconut milk so I thought, lets put a spin on white chicken chili, clean eating style. And here ya go. It came out very hot! But limiting certain spices will fix that if your not a spicy food person. My lover always says, it cleans ya out;) We love spice! This recipe is so versatile that you can cater it to your own tastes. Make it a few times different ways to figure out what you like best. OR go all in and sweat it out;) HeeHeeHee...
Curry Coconut White Chicken Chili
2 chicken breast, precooked and shredded
2 cups chicken broth, homemade from the chicken breast is best but can use store bought. I always look for organic and yeast free
1 7oz can chopped green chili or equivalent home roasted and chopped green chili
1 15.5oz can garbanzos beans or 1-1.5 cup garbanzos beans pre soaked over night, drained and rinsed + equivalent water to bean ratio if cooking from dried beans
1 cup jasmine rice + water according to cook instructions (can omit if doing no carbs or don't like rice) or cook on the side and add as desired to each serving
.5 tsp sea salt
sea salt to taste after cooked but before serving or let everyone salt to their own tasting
.5 cup canned coconut milk or if you don't like coconut you can sub for goats milk, yumm, or milk of your choice (I can not guarantee that almond or cashew milk or soy or rice will turn out)
1tbsp Flavor god garlic lovers or 1-2tsp garlic powder (less if you are not a garlic person)
2tsp chili powder (1tsp is you don't like hot)
1tspn chili flakes (a few shakes if you don't like hot)
2tsp cheyenne pepper (1tsp if you don't like hot)
1tsp curry powder (can omit if you don't like curry)
.5tsp turmeric (can omit if you don't like turmeric)
place all ingredients in a slow cooker on low in the morning and enjoy in the evening.
place all ingredients in the pressure cooker and put on rice setting, go read a book for 30 min then come back and chow.
Makes 4 big heaping and hardy bowls.
